Pasteurization value (P0)

The pasteurization value, like the F0 sterilizing value, describes a level of bacterial destruction. The calculation formula is the same, as follows:
Here, the values of Tref and Z are adapted to the micro-organism that we particularly wish to target. There are many possible ways to calculate the pasteurization value, depending on the Tref and Z values used. The combination Tref =70 and Z=10°C is very common; the target pasteurization value is generally 1000 points or minutes for a use-by date of 42 days. It is important to specify the Tref and Z values wherever this standard is not applied, to avoid major errors.
